When I go to a page that is a Child of my home(default) page, the 'Pages in this Section' shows the page and a child of the page- but it also shows other child pages of home. Can the other child pages of home not be included.

This would required a customization of the _ListNav include for your site. If you have web development skills, I can provide you with a local copy of that include script which you can customize. I can't afford web development services. My skills go as far as putting include List Nav, NavTree... in the menu editor. Dumb question, but can a page be a direct child of Menu without being part of the horizontal menu bar?
Also, in the Email form from your help doc, will I be able to use different Email addresses on different pages without having web development skills

If you mark a page as "Hidden" on the Advanced tab of the editing screen, it won't be shown in the navigation. You can also just not have the page be a child of Menu if you don't want it to show there. There isn't much use in it being a child if you don't want it shown there.
Regarding the Email form, you can change the _to field of the form to point to the login name of any user on your site and the email will be sent to the address associated with that user.
