Yes, there's a custom module available for all-out customization of user information. It does require customization via professional services to install. See http://www.editme.com/User-Management-Customization-Module

Yes - if you're adding lots of fields, typically you would select a handful for inclusion in the search and results table just as a limit of screen space.
