Automatically add new page as child

I think it would be a great timesaver if you could make it so that, if a user was looking at a page and wanted to add a child page to it, there could be a new child page button that would automatically make the new page a child of the current page they were looking at.

That's a good idea, though perhaps specific to how you're using the product. This kind of functionality could be added to your site with EditMe's API (via a developer you know or EditMe Professional Services).
