The <head> area is part of the layout, so that's where it must be changed. There's currently no simple way to do this. Some customers have made a small layout modification to use the page's Excerpt value as a META description value. I can make that change for you if you'd like.
The other way to do it is to use conditional code in your layout to show different HEAD tags depending on the current page being viewed, or - more complex - generating the HEAD value from a script that encapsulates this work.

Thank-you Matt for such a quick reply.
Specifically, I would like to be able to change the meta key words tag for individual pages. I see this site as becoming pretty large and diverse and key words for "beef" will not be appropriate on the "seafood" pages, etc. Is there a way to add another Exerpt value so one could be for the description and the second one for key words?

This would require some custom development. For example, a scripted page could be developed to allow you to enter keywords for specific pages that would then be included by the layout. This would be an 8 hour project, or $640. If you have access to a developer, EditMe's API could be used by him/her to do this as well. Let me know if you'd like to discuss that option further.
For what its worth, few search engines rely on the META keywords value any more, but look instead to the actual content of the site to determine keywords.
